Introduction

Number of Servings: 3

Ingredients

    1/2 Med Red Onion
    1 Med Yellow Onion
    3 Tbs EVOO
    Salt to Taste (not in nutritional info)
    1/2 tsp minced garlic
    1/4 tsp dried thyme
    1/2 tsp onion powder
    1 Box Low Sodium Beef Broth (Swanson preferred)

Tips

Blend for smooth soup if desired (after cooling slightly). Top with croutons, or cheese. Or dip with bread. Not included in nutritional info.


Directions

Thinly slice onions. Saute and sweat out with EVOO on med-low heat. Add salt to taste. Saute until clear, stirring occasionally. Add minced garlic, dried thyme, and onion powder. Stir to combine. Add beef broth. Cover and simmer for 20+ minutes. Serve and enjoy!
