vegetarian chop suey

Number of Servings: 8

Ingredients

    1 large can whole tomatoes
    1 large onion
    1 large summer squash
    3 tbsp olive oil
    1 polybag of Morningstar Farms Griller (recipe crumbles)
    1.5 cups shredded cheddar
    1 pound of pasta

Directions

cook pasta per directions
dice one large onion
slice one large summer squash
heat 3 tbs of olive oil to med heat
add onions and summer squash, saute 1 minute
add one can of whole tomatoes--stir
add 1.5 tsp garlic powder, and one tsp oregano
saute for about 10 minutes, stirring occasionally
transfer pasta to large baking dish
sprinkle one cup of shredded cheddar over pasta, stir
add tomatoe mixture, stirring well
sprinkle last .5 cup cheese on top
cook, covered, at 350 for 1/2 hour

Makes 8 servings
