Fiesta Salad

Introduction

This is a meal that I use to love that my school cafeteria would make. It was one of the most popular, too! This is a meal that I use to love that my school cafeteria would make. It was one of the most popular, too!
Number of Servings: 6

Ingredients

    1 lb. of Lean Ground Beef or Ground Turkey
    3 Roma or plum Tomato
    1 cup of Onion
    1 Can of Pinto beans (I prefer the one with jalapenoes added)
    1.5 Cups of Rice
    Shredded Cheese ( how much ever you prefer)

Directions

Cook ground beef and onion and use taco seasoning to taste. Add the can of pinto beans and tomatos. Prepare rice as to what is stated in instructions.
Serve by placing the amount of rice that you would like and place the amount of ground beef and tomato mixture over the rice. Add cheese.
