1 pound ground butterball Turkey 93% lean
1 tablespoon unsalted butter
1 fresh eggplant, peeled
1 jar(23.5 oz) Prego 100% Italian Sauce - heart smart -traditional
A couple of shakes of Tabasco Sauce
Stir often - careful that the turkey doesn't stick to the bottom of the pan before you add the Prego
Chop peeled eggplant into half inch to one inch cubes - add to pan once turkey is cooked.
cover and cook another 10 minutes or until eggplant is tender.
Add jar of Prego and stir. Add Tabasco and stir. Cook for 10 minutes or more uncovered. Stir occassionally.
