Easy Tomato and Spinach Pasta Sauce

Introduction

An easy, flavourful tomato sauce that is great on pasta or spaghetti squash. An easy, flavourful tomato sauce that is great on pasta or spaghetti squash.
Number of Servings: 6

Ingredients

    1 28oz can diced or stewed tomatoes
    1 can tomato paste
    1 10 oz package frozen chopped spinach (do not thaw)
    4 tbsp shallots
    3 garlic cloves, crushed
    1 tbsp olive oil
    2 tbsp oregano
    1 tbsp basil
    salt and pepper to taste

Directions

Soften shallots and garlic in oil in large saucepan, but do not let them get too brown.
Add tomatoes and frozen spinach, bring to a boil. Stir constantly to break up spinach. Add spices, sugar and salt and pepper and simmer for 20 minutes.

Serving Size: Makes 6 1-cup servings
