Potato Soup

Introduction

Number of Servings: 12

Ingredients

    5 pounds boiled Potatoes, cubed
    1 large onion, chopped
    2 c. grated carrots
    16 c. water, tap....enough to cover the potatoes
    1 stick Blue bonnet Light Butter
    2 packages Jimmy Dean Country Gravy Mix (makes 8 servings)
    1 c. 1% Milk
    1 c. shredded cheese (any flavor; taco, pizza or mexican style is best)

Directions

Peel, wash, cube the potatoes. Chop the onion into small pieces, grate the carrots. Add enough water to cover the potatoes. Boil until done; about 30-45 minutes. Add 1 stick Blue Bonnet Light butter. While the butter is melting, mix 1 c. Milk with 2 packages Jimmy Dean Country Gravy mix. Once the butter is melted, add the gravy mix and stir. Let boil until starts thicken. Serve in soup bowls with a 1 oz. of the shredded cheese, let melt, stir into soup. Or you can add the cheese to the pot of soup, let melt & serve.
