2 cups Navy beans, sorted and rinsed.
1 cup celery diced.
1 cup carrots diced.
1 cup onions diced.
1 cup of potato finely diced.
1 97% lean Ham steak about 1/2 cup diced.
1/4 cup of 99% fatfree chicken broth.
A dash of Curry Powder to taste.
Pepper to taste before serving.
Put them in a large Pot bring to a boil for 2 minutes. Let soak for 1 hour.
After soaking beans, rinse and add 6 cups water to beans. Bring to a boil, then lower to simmer.
Simmer beans for 1 hour, keeping a watchful eye on them, stirring and adding water as needed.
Add celery, carrots, onions, potato and ham, chicken broth and curry powder. Simmer for 20 to 30 minutes until soup is the consistency that you desire. I like mine thick and creamy. Pepper and serve!
