Cheesy Potato Casserole

Number of Servings: 24

Ingredients

    Butter, salted, 1 stick
    Onions, 1 large, chopped
    Cream of Mushroom Soup, 2 cans (10.75 oz)
    Cream Cheese, 1 1/2 pkgs (8 oz ea)
    Frozen hash brown potatoes, 2 pkgs (32 oz)
    Sour Cream, reduced fat, 1.5 cup
    Kraft 2% Sharp Cheddar Cheese, 12 oz, divided

Directions

In large casserole dish, melt butter in microwave (1 min). Add onions, mushroom soups and cream cheese. Microwave 2 minutes. Stir well, then add 8 oz shredded cheddar cheese and thawed hash browns. Mix well, then cover casserole with aluminum foil, being careful not to touch the potato mixture. Bake for 1/2 hour at 350, uncover and stir, then top with remaining cheese. Return to oven, uncovered, for 1/2 hour.

Serving Size: Makes 24 servings, about 1/2 cup each
