Ingredients

no stick Pam spray
Egg, fresh, 3 medium
Cheddar or Colby Cheese, Low Fat, 2 oz
Mushrooms, fresh, 2 cup, pieces or slices
Green Bell pepper, 1 cup, strips
Egg whites, of 6 eggs
salt and pepper to taste
Tips
Serve with fresh fruit and 1 slice of toast with 1 tsp of almond butter. If skipping the almond butter or fat on toast, add 1 tsp of olive oil to frittata for a healthy fat with this meal.
Directions
cook green peppers and mushrooms till green pepper tender
beat eggs, add to skillet with vegetables
cover, cook at low heat until eggs are set and sprinkle cheese on top
