Ingredients

3/4 c. skim milk
2 T. vinegar
1 c. flour
2 T. sugar
1 t. baking powder
1/2 t. ground cinnamon
1/2 t. baking soda
1/2 t. salt
1 lg. egg
2 T. butter, melted
1 t. vanilla extract
Cooking Spray
1/2 c. frozen blueberries, UNthawed, divided

Directions
In a large mixing bowl, combine milk and vinegar to sour; set aside for 5 minutes.
In another medium/large mixing bowl, combine (you can sift, if you prefer) flour, sugar, baking powder, cinnamon, baking soda, and salt. Whisk egg and melted butter into milk. Pour dry ingredients into wet ingredients; whisk until smooth and lumps are removed.
Heat a griddle or large skillet over medium heat, then coat with cooking spray. Pour batter by 1/4 cupfuls (an ice cream scoop works well) and using a spoon, sprinkle frozen blueberries on each; cook until bubbles appear on the surface and edges look SLIGHTLY dry. Flip with a spatula; cook until browned on the other side.
