16 oz Penne Pasta
1 can evaporated milk
8 oz Italian Cheese Mix
1 T olive oil
1/2 onion, choped
1/2 c pinenuts
1 can chicken breast
1/2 c. sundried tomatoes
1 c chopped fresh spinach
The later the spinach is added, the crispier it will be.
Saute onion in olive oil until translucent. Add pinenuts and chicken, cook until heated through. Add sundried tomatoes. Add spinach, sauteing for 1 minute prior to adding this mixture to the pasta.
Meanwhile, in a medium sauce pan, bring evaporated milk to low boil, then add cheese, stir until melted.
Drain pasta, return to pot and add sauce and onion mixture. Mix Well
