430gms ground chicken, lean
200gms zucchini, cut into thin lengths
100gms tomatoes, chopped (or drained tin)
1 small onion, diced
1-2 cloves garlic, crushed and diced
fresh basil leaves, 5
ground black pepper
1 tsp chicken stock (or 1 chicken stock cube)
2 tbsps parmesan cheese, grated finely
1 tsp/spray of olive oil
Can reheat this at a later time - for lunch the next day.
2. Brown off chicken mince.
3. Add tomatoes, herbs and seasonings. Cook all together until chicken cooked through.
4. In a non stick baking dish, layer chicken mixture with zucchini strips until the top layer of zucchini.
5. Sprinkle finely grated parmesan cheese on top and bake for 40 mins (until lasagne is browned on top, and bubbling).
