Very Berry Orange Muffins

Ingredients

    1/2 cup rolled oats
    1/2 cup lowfat buttermilk
    1 1/2 cups whole wheat flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp ground cinnamon
    1/4 tsp salt
    1 medium orange
    1/2 sup granulated sugar
    1/4 cup vegetable oil
    1/4 cup egg substitute
    1 cup blueberries
    1/2 cup dried cranberries

Directions

Stir together oats and buttermilk. Set aside 5 minutes. Whisk together dry ingredients. Grate rind of orange and place in bowl. Squeeze 1/2 cup juice from orange and add to rind. Whisk in sugar, oil, and egg until smooth. BLemd in oatmeal mixture then dry ingredients. Gently fold in berries. Spoon into 18 papered muffin tins. Bake 15 minutes.
