Canned Corned Beef with Onions

Introduction

Traditionally made in the Caribbean to go with rice. I've had it in Puerto Rican and Trinidadian homes. Traditionally made in the Caribbean to go with rice. I've had it in Puerto Rican and Trinidadian homes.
Number of Servings: 12

Ingredients

    2 12oz cans Libby’s Corned Beef
    2 small Onions, raw
    2 cloves Garlic, chopped
    1 Scotch Bonnet Pepper, cut large without seeds

Directions

Spray frying pan with Pam and let the pan heat up. Once it's heated add the onion and garlic. Saute until the onions are translucent. The meat is already salty so no need to add salt but you can add black pepper to taste. Add the pepper and saute until soft. Add the corned beef. Break up the beef and cook until it is warmed through and the meat begins to get darker. Serve over rice.

Serving Size: makes approximately 12 1/4 cup servings.
