8 slices of whole wheat bread (sandwich size) buttered on both sides
3 cups chicken or turkey chunks, cooked
1 small onion, chopped
1 cup celery, chopped
1 can sliced mushrooms
1 cup mayonnaise
2 cups nonfat milk
1 can cream of mushroom soup
2 cups grated cheddar cheese
Baking times vary. Casserole is done when the center is no longer runny and vegetables are crisp tender.
Mix mayonnaise, eggs and milk together and pour over bread.
Cover with foil and refrigerate over night.
When ready to bake, preheat oven to 325F. Mix cream of mushroom soup, a little milk to thin, and cheese. Pour over casserole. Bake at 325F for 1 hour.
