Introduction

this is a yummy, hearty one pot meal my mom clipped from a magazine in the 80s. i promise you if you try this, you will keep it in your bag of tricks forever. it is easy and unforgettably amazing. this is a yummy, hearty one pot meal my mom clipped from a magazine in the 80s. i promise you if you try this, you will keep it in your bag of tricks forever. it is easy and unforgettably amazing.

Ingredients

    1 package fresh, organic spinach
    1 box organic chicken broth (2 cups needed)
    1 lb lean ground beef (or ground turkey)
    1 clove of garlic, crushed
    2 medium chopped yellow onions
    2 tbsp olive oil
    1 cup brown rice
    2-3 tbsp dried thyme
    lemon wedges (2 lemons)
    1 large container low fat sour cream

Directions

chop onions and brown in olive oil. add garlic, brown 1-2 minutes and set aside

chop spinach into small pieces

brown ground beef

in a stew pot, combine beef, onions, rice, thyme, chicken broth and spinach. (i find the more thyme, the better. i'm not afraid to use QUITE a lot.) add salt to taste, and stir it all up good.

bring to a boil, then let simmer until rice is cooked (about 20 minutes). you may need to add water or broth during this time.

serve with lemon wedges and a dollop of sour cream. serves 6-8
