Introduction

Quick Lunch - just combine all ingredients in microwave safe container and cook at work. Only needs to heat through. Quicker than grabbing fast food and just as easy. Ingredients

    Ingredients:

    1/2 cup Black Beans (rinsed and drained)
    1/2 cup Brown Rice
    1/2 cup *Diced Tomatoes Rotel green chilies
    1/2 tsp minced garlic, jarred
    1 slice *"Great Value" Pepper Jack Cheese
    1/2 tsp Mrs Dash Fiesta Lime Seasoning (or more to taste)
    Freshly Cracked Pepper (to taste)

Tips

Quick and SPICY but I like it that way! You could substitute fire roasted tomatoes for some or all of the rotel if you are not up to the heat. Add onions, celery and/or green peppers sauteed in cooking spray if you are making this as a side dish. Feel free to add some canned corn (rinsed and drained) or frozen corn (adjust caloric content appropriate) for a change. It's flexible, versatile and quick.


Directions

Combine ingredients and place in microwave safe bowl. Heat for 3 minutes in microwave until hot and cheese is melted and eat.


Serving Size: makes 1 lunch size serving - increase proportionally to use as side dish or main meal
