World's Best Paleo Pancakes -- Low Carb, Gluten Free

Introduction

I used to be able to down 3, 6" pancakes and not feel full. I eat two of these little guys and I'm STUFFED! Yay fiber! Coconut flour is great for making these pancakes. Ingredients

    1/2 cup Coconut Flour (I like Coconut Secret, as it's a lower-calorie brand of RAW flour)
    4 eggs
    1 cup almond milk (or any milk you like)
    1 tsp. baking powder
    1/4 tsp. salt
    2 tsp. splenda/ stevia
    1 tsp. brown sugar
    1 tsp. vanilla
    1 pat Butter (for the griddle)

    Optional add-ins:
    ~Fresh blueberries
    ~1 tbsp. cocoa powder (plus 1 extra tsp. sweetener)
    ~2 tsp. pumpkin pie spice
    ~1/2 mashed banana (reduce the milk by 1/4 cup) and 1/4 cup. chopped pecans

Tips

This batter will be much thicker than traditional pancakes. DON'T thin it out -- you need a thicker batter so that you have thick, fluffy pancakes instead of chewy crepes.

Directions

In a medium bowl, mix the flour, baking powder, salt, and splenda. Set aside. In a separate bowl, whisk together milk, eggs, brown sugar, and vanilla. Pour the wet mixture over the dry and whisk thoroughly, until the batter has thickened considerably.

Heat a griddle over medium heat and grease it with a pat of butter. Measure 1/4 cup scoops of the batter onto the griddle and cook until browned. When the edges of the pancakes are dry, you can flip them.

Serve with fruit compote or maple syrup and enjoy!

Serving Size: Makes 8-10 small pancakes
