Vegetable Soup with Lentils

Number of Servings: 6

Ingredients

    4 c vegetable broth (1 tetra pack)
    1 c lentils
    1 lrg onions
    3 stalks of celery (chopped)
    1 medium carrot (chopped)
    1 bay leaf
    28 oz diced tomatoes - with liquid
    1 tbsp cider vinegar
    1/4 tsp black pepper
    1-2 c water (to taste)

Directions

1. Bring broth, lentils, carrots, onions, celery and bay leaf to a boin. Then cover and simmer until tender. About 30 mins.

2. Stir in diced tomatoes with juice, vinegar and pepper. Add water until desired thickness. Cook covered, stir occasionally, about 10 minutes. Discard bay leaf.

Serving Size: Makes 6, 1 3/4 c servings
