Polish Blue Cabbage with a twist (Black Currants)

Introduction

Number of Servings: 6

Ingredients

    One Medium Blue/red Cabbage

    Two Granny Smith Apples (Skin ON)
    ~One and a half cups of red wine (or to taste)
    ~Half of a cup of Red Wine Vinegar
    ~Black Currant or Juniper Berries to taste(I use 12-15 berries)~Two Red Onions
    ~Half of cup of Salt Butter
    ~Half of a cup of Brown Sugar or to taste
    ~1 Can of beef broth can be Chicken or Vegetable plus one can of water

    Other spices..

    Juniper Berries..I prefer black currant which has a similar taste and I have lots on my property. 15/20 berries..pending your taste.

    Cloves to taste
    salt to taste
    White Pepper to taste



Tips

I am on a low sodium diet so I prefer very little salt compared to what most people eat.

Add your cabbage place on low heat so that cabbage stews. Ususally a few hours..

You can also add bacon to this recipe..Chop two cups of bacon and then sautee your onions and continue with the recipe.


Directions

Chopp I medium Red Cabbage accordingly and set aside.

Sautee two cups of Red Onions with butter on Medium Low Heat when onions turn nice light brown.( Salt to taste)
~ Add Beef or favorite broth plus one can of water
~ -Add chopped apples with skin on
_one cup or to taste red wine.
-add half a cup of red wine Vinegar
-Add Brown Sugar about half of a cup or to taste.

Heat everything nicely over the medium low heat for about 15 minutes then Add to your "Cabbage Pot
Mix everything accordingly and adjust your seasonings to taste.

I leave the Pot lid partially on.

The cabbage will have to cook down however some prefer to eat it after 45 or so.
I like my cabbage some what tender with a bit of a bite. Some people prefer less or more! My cabbage is good to go after 2-3 hours!
