Introduction

This is one of my cooking experiments that I think turned out deliciously! Take my seasoning measurements with a grain of salt (pun intended) because I don't measure. Number of Servings: 4

Ingredients

    Chicken Broth, 32-ish fl. oz. (my box was maybe 1/4 empty when I dumped it in)
    Rotel, Diced tomatoes & Green Chilis, 10oz can
    Scallions, raw, 1 cup, chopped
    Garlic, crushed 2 clove
    Pepper, black, 1 tsp
    Cumin seed, ground, 1 tbsp
    Cilantro, raw, 3 tbsp
    Chicken Breast, bone-in, no skin, 2 breast
    Lime, juiced, 1
    Tabasco, couple of dashes

Tips

This would also be great with corn, hominy, or even black beans. I just tried to keep it paleo :)


Directions

Peel tomatillos (run under hot water to loosen skin and wash off sticky residue)
Coarsely chop tomatillos, scallions
Remove skin from chicken breasts
Pour chicken broth in pot with thick bottom (e.g. Dutch oven)
Add chicken, salt, pepper, ground cumin, garlic, rotel, chopped tomatillos, and green onions
Bring to and boil and reduce to a simmer until chicken is done ~30 minutes
Reduce heat to low
Remove chicken from soup and let cool
Chop fresh cilantro and put in soup
Add juice of one lime
Using immersion blender (or food processor), blend until cilantro is chopped and no more chunks remain
Adjust seasoning, if necessary
Shred chicken and return meat to soup
Mix chicken in soup and enjoy!
