Introduction

Gluten free spinach dish high in protein and low in calories.

You can use a home made garlic hummus recipe or a store bought hummus, just delute it with lemon juice so the consistancy is not as thick.

Beans, rice & hummus should all be prepared in advance for a super quick lunch entre.

Ingredients

    1-2 cups fresh spinach
    1/3 cup of rice
    1/4 cup salsa
    1/4 cup black beans
    2 T garlic hummus (thinned with lemon juice)

Tips

Great with a little hot sauce!

A little avacado tastes great with this too!


Directions

Spread spinach on a plate for the first layer, then put the rice on top, add the salsa for the next layer, then the black beans, top with the thinned hummus.
