Introduction

A reduced calorie version of my Mom's amazing banana bread. This recipe is also great with nuts, but keep in mind that it will affect the nutritional values. A reduced calorie version of my Mom's amazing banana bread. This recipe is also great with nuts, but keep in mind that it will affect the nutritional values.
Number of Servings: 10

Ingredients

    1/4 cup Smart Balance Light Buttery Spread
    6 packets Splenda sweetner
    1/2 cup Sugar
    4 Medium, over-ripe bananas, mashed
    1 Large Egg
    2 T Lemon Juice
    1 1/2 cups Whole Wheat Flour
    1 tsp Baking Powder
    3/4 tsp Baking Soda

Directions

Preheat oven to 350 degrees

Mix butter, sugar, mashed bananas, egg, and lemon juice

Add flour, baking powder, and baking soda

Spray loaf pan with a light layer of Pam and then pour batter into pan

Bake in over for 45 min - 1 hr (test with a toothpick)

Serving Size: 10 slices
