Flax Seed Crepes, 1 crepe

Introduction

Crepes are good for breakfast or lunch. Add a bit of sugar for sweet crepes, or herbs for lunch crepes. Crepes are good for breakfast or lunch. Add a bit of sugar for sweet crepes, or herbs for lunch crepes.
Number of Servings: 6

Ingredients

    2 egg whites
    1/4 cup ground flax seed
    1/2 cup whole wheat pastry flour
    3/4 cup nonfat mik

    Optional
    sugar
    herbs and seasonings

Directions

Mix all ingredients in bowl or blender.
Heat skillet or griddle over medium heat and spray with nonstick cooking spray.
Pour 1/4 cup mix onto pan and tilt pan in circles so mix spreads.
Heat until bubbles appear in center then flip. This will give you a lighter crepe if you like them crispier then leave them on a little longer.

makes 6 - 1/4 cup pancakes.

you can top with fruit yogurt for low fat and light, cheese and lunch meat, brocolli and chicken.
