Introduction

Sometimes your dinner was so good that you want it for breakfast. Also sometimes you have a little bit left over but not enough for its own meal. I like to use these items for breakfast with eggs. Tips

I use this method generally with any leftovers to add flavor and get in extra veggies/protien for the day. The purpose of submitting this recipe is just to spark ideas for other people and share tips.


Directions

Excluding the eggs, I combined all ingredients in a pan to reheat. Brussel sprouts and bacon was once its own side dish, as were the potatoes and diced peppers that accompanied the sausage.

Once they've come together I remove from heat and plate it. I use the same pan to cook the eggs as it has natural oil from the little bit of bacon and sausage. I always add a season mixture of black pepper, seasalt, and garlic powder to the eggs.

I top the heated-through leftovers with the eggs. When you break the creamy yolk, it really transforms the leftovers into a very indulgent-looking meal.
