Ingredients

    6 - 8 C of Cauliflower
    2 - 3 Stalks of Celery
    Water
    1 C Fat Free chicken stock
    1 cup of Fat free Cheddar Cheese
    2 Tbsl of light margarine
    1/2 C 2% milk
    2 - 3 Tbsp cornstarch (for thickening)
    Salt and pepper to taste

Directions

Cut up cauliflower and celery and cook covered for approximately 10 minutes or until soft. Remove from heat and cool. With a potato masher (or in a food processor) mash to desired consistency. Return to heat and add margarine, chicken stock, cheddar cheese, salt and pepper until throughly combined. Mix together in a separate bowl the milk and cornstarch. Add to mixture to thicken and serve.
