2 Cups Pinto Beans
2 Cups cooked rice
5 oz Low fat marble cheese
2 Cup Salsa sauce
.75 cup of low fat sour cream
9 Leafs of cabbage
1 tsp of taco seasoning
Mix Beans, salsa (save some for the top), cooked rice and taco seasoning let it warm.
put filling in cabbage sprinkle cheese wrap up
Place enchiladas in baking pan put a tbsp of salsa on each then back for 30-45 min. until cabbage reaches desired texture
Serving Size: Makes 9 Enchiladas
