Chicken Etouffee

Introduction

Number of Servings: 3

Ingredients

    9 ounces Chicken Breast (approximately 2 breasts)
    1/2 medium Onion diced
    1/2 Bell pepper diced
    2 stalks Celery diced
    1 clove Garlic
    2 Tbsp. Canola Oil
    1/4 cup all purpose flour
    2 cup Chicken Broth - Low Sodium
    1 tsp. Paprika

Directions

Brown the chicken in oil, remove the chicken from the heat and cut up into bite size pieces. Dice the onion, garlic, pepper and celery, saute in pan the chicken had been browned in, about 3-4 minutes, add 1/2 broth, mix other half of broth with flour mix into vegetables, add chicken back to sauce and cook until thickens. Season to taste with salt, pepper, or hot sauce. Serve with or over rice or grain.
