Chicken and Asparagus Alfredo Pasta

Introduction

This is a delicious combination of veggies, pasta and chicken without breaking the calorie bank! Very easy to substitute/add different veggies and even add more chicken for additional protein. Ingredients

    Farfalle Multigrain pasta (bow-ties)
    2 chicken breasts, cut into 1" pieces
    1 T olive oil
    1 onion, chopped
    2 cloves garlic
    1 lb. asparagus, cut in half
    1 red bell pepper, cut into bite sized pieces
    Basil, few dashes
    Oregano, few dashes

    Sauce-
    4 T butter
    4 cloves garlic, minced
    4 T flour
    1 1/2 C chicken broth
    1 1/2 C milk
    2/3 C shredded parmesan cheese
    Salt and pepper to taste

Directions

Cook pasta as directed on package.

Heat olive oil in pan. When hot, add chicken. When just about cooked through, add onion and simmer for about 5 minutes. Add 2 cloves minced garlic and cook 2 more minutes. Add asparagus and cover for 5 minutes, stirring occasionally. Finally add in the red pepper and cook an additional 5 minutes.

Meanwhile, in a medium saucepan prepare the sauce. Melt butter. Add garlic and cook over medium heat for 1 minute. Add flour and cook 1 minute stirring constantly. (This shoud make a roux). Stir in broth and milk. Cook until it boils and thickens. Stir in salt, pepper and cheese.

Combine pasta, veggies/chicken, and sauce. Enjoy!

*I know this sounds like a lot of steps, but it is really easy once you get the veggies chopped.
