Number of Servings: 10


    Cottage Cheese, Nonfat, 1.5cup
    Brown Rice flour, 0.25 cup
    Oatmeal, 0.25 cup
    Whole Wheat Flour, 0.5 cup

    Egg, fresh, 1 large
    Butter, softened at room temperature, 4 tbsp

    Raisins, 0.25 cup
    Banana, fresh, 1 large mashed

    Granulated Sugar, 4 tea spoons
    Honey, 0.25 cup (remove)
    Baking Powder, 0.5 tsp


For a gluten free option use only rice flour and oatmeal.
To cut down sugar use only honey.
To cut down colesterol use canola oil.


Mix dry ingredients.
In a large bowl mix all other ingredients and slowly stir in the dry mixture.
Preheat oven at 375 F.
Pour mixture into buttered muffin pan filling each cup to 3/4.
Bake till risen and golden (about 30-35 minutes)
If unsure do a toothpick test.
