Number of Servings: 1

Ingredients

Small ball of pizza dough. Golf ball size
    One Italian tomato
    .25 cup of mozzarella cheese
    .25 canned mushrooms
3 Tablespoon of chopped black olives
    1 Tablespoon of Parmesan cheese
    Olive oil spray

Tips

Note: You can add Italian seasoning or garlic powder to crust before baking.
If you want to add 6 or 8 small slices of pepperoni add them after the tomatoes.
Or 3 very thin sliced salami cut up into bite sized pieces.
That would add 60 calories to pizza.

Directions

Spray a pie pan with cooking spray.
Pat out the room temp. pizza dough as thin as you want. to 7 or 8 inches. Fills the bottom of pan.
Bake in hot toaster oven , on lower rack. It will get crisp on bottom, and top is starting to brown. About 5 minutes.
Remove from oven, add the mozzarella cheese, thin sliced tomatoes, can sprinkle on some Italian seasoning .
Add mushroom, black olives and a sprinkle on the Parmesan cheese. Bake on lower rack under the broiler till top is bubbling and cheese melted.
The baking time will depend on what kind of oven it is baked in. Just keep you eyes on it.

  • Sounds delicious Tish. I think it's very similar to the veggie pizza I make quite often. Depending on what I have on hand, I add green and red sweet peppers, as well as a few chopped pepperoncini, which is my favorite! - 2/2/12
