Introduction

with Spinach, Sweet potatoes and squash in a homemade herb and veggie broth with Spinach, Sweet potatoes and squash in a homemade herb and veggie broth
Number of Servings: 5

Ingredients

    1 small onion sliced
    4 garlic cloves crushed and chopped
    2 cup spinach
    1.5 cup of butternut squash peeled and cubed
    3 basil leaves or dash dried basil
    1 bay leaf whole
    1 sprig of fresh rosemary
    1/2 tsp of oregano
    1 tbsp olive oil
    2 tsp sea salt
    1 large sweet potato peeled and cubed
    1/8 cup tomato paste

    Optional
    .25 plain pumpernickel croutons, toasted pita slices, or whole grain low sodium crackers for topping per bowl



Tips


Directions

heat oil on medium heat add sliced onion, pepper and garlic until fragrant add the herbs, bay leaf and black pepper, add water and bring to a to boil add tomato paste, sweet potato and squash let cook about 10 minutes stirring occasionaly. check sweet potatoes and squash for doneness once done you add Spinach and simmer an additional 5 to 10 minutes. Serve in bowls and top with 1/4 c of plain multi grain or pumpernickel croutons, pita chips or multi grain crackers.
