I'm going to go back and look at the sodium level, but for those who think it's too high, remember it's A WHOLE MEAL.

Looking at it like that makes it a completely different matter. - 9/21/09

  • Frozen veggies with beans sautéed with olive oil, red wine, garlic, paprika, s&p, celery salt, parsley and diced dried onions. The veggies were so yummy I only needed a little shredded cheese and no butter. Can't wait for the leftovers! - 8/1/11

I like baked potatoes with non-fat yogurt or cottage cheese, too. Protein. - 11/25/08

  • I do this all the time -- however, I bake it in the microwave for 7 minutes and then in the oven for 8-10 minutes. It tastes more like a backed potato, rather than a micro'd one. I sometimes eat it with just cottage cheese and canned tomatoes or this and add fresh veggies. Always filling and great! - 11/25/08

  • Thanks for the idea,I was suprised how nice it is and its easy and quick. I've altered it slightly by using garlic and herb sauce instead of croutons but I love it. - 11/25/08

  • Great idea. I would oven-bake the potato because I prefer the taste/texture, but I'll definitely try with the stir-fry topping. - 11/25/08

  • This sounds like a great idea but I think I would carve the potato to fill it with more veggies, and I would add some garlic and oregano to the stir fry. Thanks for sharing! :-) - 11/25/08

  • Sounds great, of course if you're overly health concious making it in the oven and adding fresh veggies saute'd to the recipe in place of the frozen would come out pretty much the same, just bake it for 50 min at 400 degrees. It's a good recipe. - 11/25/08
