Applesauce Oatmeal Banana Muffins

Ingredients

    Topping:
    0.25 C oats
    1 Tbsp packed brown sugar
    1 Tbsp butter, melted
    1 tsp cinnamon (more or less depending on taste)

    Muffin:
    1.5 C oats
    1.25 C whole wheat flour
    1 tsp baking powder
    0.75 tsp baking soda
    2 tsp cinnamon (more or less depending on taste)
    0.5 C unsweetened apple sauce
    0.5 C mashed banana
    0.5C Almond milk
    0.5C packed brown sugar
    3 Tbsp vegetable oil
    1 egg white

Directions

Preheat oven to 400F.

Combine topping ingredients, set aside.

In one bowl, combine oats, flour, baking powder, baking soda, and cinnamon - mix. In another bowl, combine applesauce and banana, almond milk, sugar, oil, and egg white - blend well. Add the bowl of wet ingredients to dry ingredients, stir until all are moistened but not over-mixed.

Either line muffin tins with paper cups or spray tins. Fill 12 muffins nearly full, divide topping among the muffins.

Bake for 20-22min.

Let cool on wire racks.
