Introduction

This is my go-to recipe when I want a quick(er), healthy French Onion Soup. I don't like the croutons in my soup so they have been left out. This is my go-to recipe when I want a quick(er), healthy French Onion Soup. I don't like the croutons in my soup so they have been left out.
Number of Servings: 6

Ingredients

    3 medium onions, thinly sliced
    1 tablespoon olive oil
    4 cups beef broth
    1 tablespoon balsamic vinegar
    1 dash of liquid smoke
    3 oz. parmesan cheese, thinly shaved

Directions

Caramelize onions in olive oil on medium heat in a medium-sized pot for 15-20 minutes. Add beef broth, balsamic vinegar and liquid smoke to onions. Bring to a simmer & cook until liquid is reduced in half. Top one cup of soup with 1/2 oz. of parmesan cheese.

Serving Size: makes approx. 6 1-cup servings
