Introduction

I didn't think this would have a lot of flavor when I made it, but I was pleasantly surprised! Boy, was it filling! I didn't think this would have a lot of flavor when I made it, but I was pleasantly surprised! Boy, was it filling!

Ingredients

    3 large egg whites
    1/4 can cut baby corn, well-drained
    1/2 cup artichoke quarters, well-drained
    1/4 cup part-skim mozzarella, shredded

    Tip: Rinse vegetables to reduce sodium, making sure to squeeze out the water

Directions

Heat greased skillet to medium heat. Pour in egg whites, spread around pan. Immediately add vegetables, cover pan. Cook until eggs are cooked through. Add cheese, cover pan, turn off heat and allow cheese to melt slightly. Fold omelette and serve.
