Low carb sponge cake

Introduction

This is ab-fab! I couldn't find soy flour so I just used normal flour. Still only 11g of carb per serving, which I think it's pretty great! This is ab-fab! I couldn't find soy flour so I just used normal flour. Still only 11g of carb per serving, which I think it's pretty great!
Number of Servings: 8

Ingredients

    120g self-raising flour
    1.5 tsp baking powder
    dash salt
    3 eggs
    3 tbps (3g) Splenda
    125ml whipping cream
    3 tsp vanilla essence

Directions

Preheat oven to 150oC (gas mark 2).
Heat whipping cream until just before it starts to boil. Remove from the heat.
Sift the flour, baking powder and salt together.
Whisk the eggs and Splenda thoroughly until thick.
Blend in the flour mixture just until smooth.
Add the warm cream and vanilla essence to the mixture.
Pour batter immediately into a 22cm greased cake dish.
Bake for 45 minutes, or until done.
