Butternut Bisque (1serving=2 cups)

Ingredients

    4 T butter or alternative
    2 med leeks chopped
    1 c chopped celery
    2 med carrots chopped
    1 1" piece ginger, peeled & roughly chopped
    1 fresh jalapeno chili, seeded & chopped
    1 med butternut squash, apx 2 lbs, peeled, seeded, cut into cubes
    4 c stock or H2O
    1/2 c soy 1/2 & 1/2
    salt & pepper

Directions

In a soup pot over med heat, melt butter. Add leeks, celery, carrots, ginger, and jalapeno. Saute apx 15 min or until wilted. Stir in squash and stock. Bring to boil. Reduce heat to med-low. Cover, simmer 20-30 mins, or until vegetables are very soft. Puree. Stir in cream.Season w/ salt & pepper.

Serving Size: makes 5 2 cup servings
