Creamy and Chunky Tomato Soup

Ingredients

4T butter
.5 C diced onion
.5 C. chopped celery
2 T flour
1 t salt
2 t sugar
.5 t black pepper
1 t basil
3 C fat free, skim milk
1 can petite diced tomatoes, not drained
3 tomatoes (I freeze mine from the garden, so that is what I used).
Tips
Directions
Saute onion and celery in the butter. When onions are translucent, add flour and spices. Stir until well blended. Slowly add the three cups of milk. Stir until boiling and thickened. Slowly (I do one ladel at a time) add the tomatoes to the milk mixture (I also heat my tomatoes before adding them to the mix to make an easier transition). Stir the entire time you are adding the tomatoes.
I blend the soup in a blender after it is cooked, but it is good chunky as well! My kids just won't eat the chunks.
