Ingredients

    2 lb. beef chuck - trimmed of fat
    1 ½ cup diced onion
    1 tbsp. butter
    4 cups diced tomatoes
    1 cup corn
    1 cup chopped cabbage (opt.)
    1 cup diced carrots
    1 cup diced celery
    ¼ cup barley
    1 tbsp. oregano
    ¼ tsp. garlic powder
    ¼ tsp. pepper
    ½ tsp. salt
    1 tbsp. parsley
    Water

Tips

I use beef chuck because of the flavor that chuck has. I trim off as much of the fat as possible and the soup does not suffer any loss of flavor at all.


Directions

This is a hearty, very flavorful soup for lunch or dinner. The best I ever came up with!

In large pot, brown beef cuts in butter. Add onion and sauté until soft.

Add tomatoes, carrots, corn, cabbage, celery and seasonings and enough water to cover well and simmer for one hour.

Add the barley, and simmer an additional 20 minutes.

Serve with some crackers or whole grain roll and a salad ... yum!
