Zesty Fish Po’ Boys

Ingredients

1 pound skinless flounder fillets, cut into 1 1/2-inch strips, and patted dry
2 Tbsp cornmeal
Salt and ground pepper
1-8 oz. multi-grain baguette, cut in half horizontally, and hollowed out slightly
4 romaine lettuce leaves
2 medium tomatoes, sliced

Zesty Tartar Sauce
1/ 2 cup reduced fat mayonnaise
2 Tbsp chili sauce
2 Tbsp fresh parsley, chopped
2 Tbsp grainy mustard
2 Tbsp dill pickles, chopped
Dash of hot sauce (Tabasco) as desired.
Tips
Directions
Combine all ingredients for the Tartar Sauce in a medium bowl and chill. Place fish in a medium bowl. Add cornmeal; season with salt and pepper. Toss to coat. Coat a large nonstick skillet with cooking spray. Brown fish (work in batches if needed) on medium heat on both sides, 7 to 10 minutes (turn fish carefully). Transfer to a paper-towel-lined plate; season with more salt, as desired. Spread both halves of baguette with zesty tartar sauce, and layer with lettuce, tomatoes, and fish. Cut into 4 pieces.
Substitute the flounder fillets with any mild fish, such as Dover sole fillets, cod, tilapia fillets, halibut fillets, pompano fillets or orange roughy fillets.
