Low cal Sweet n Sour Chicken

Introduction

A low calorie, low sodium sweet stir fry. A low calorie, low sodium sweet stir fry.
Number of Servings: 8

Ingredients

    1 c. low sodium chicken broth
    1/4 c. cider vinegar
    1.5 T. low sodium soy sauce
    2 T. splenda brown sugar blend
    2 T. extra virgin olive oil
    1 lb. boneless/skinless chicken breast, diced
    1 med red bell pepper, chopped
    2 med carrots, chopped
    1.5 c. broccoli, chopped
    1/2 med. onion, chopped
    2 cloves garlic, minced
    1-8 oz. can pineapple chucks, drained
    4 tsp. corn starch
    4 T. cold water

Directions

Heat oil in wok or large skillet on med.
In a bowl, combine first 4 ingredients, set aside.
Turn up heat to med/high. Add chicken. Stir fry until no longer pink. Add veggies, stir fry 5-10 mins depending on how tender you like them. Add garlic & pineapple for 2 mins, then add chicken broth mixture.
Mix together corn startch & water, add to skillet. Stir until sauce thickens.

Serve over rice (not included in calories)
