Enchiladas

Ingredients

    24 ounces ground beef, weighed after browned and drained
    20 corn tortillas
    4 ounces shredded colby jack in filling
    4 ounces shredded colby jack on top
    1 cup chopped onion
    1 large can enchilada sauce

Directions

Preheat oven to 350 degrees. Brown and drain ground beef. Mix in chopped onion, 4 ounces of cheese, and about 1/2 cup of the enchilada sauce. Heat corn tortillas in the microwave for 3 minutes to soften. Dip each tortilla in the remaining sauce, spoon in filling and roll up. Put in 9 X13 pan sprayed with cooking spray. There may be too many for one pan. When you have filled the 20 tortillas, pour remaining sauce over them and sprinkle any remaining filling on top as well as the rest of the cheese and bake for 25 minutes or until cheese is melted on top.
