Ham & Cheese Enchilada Bake

I have also made this in a crockpot; low setting, 3-4 hours. The sodium is higher than I would like, but as we are generally fairly good about watching it we do okay with this dish on occasion. Number of Servings: 8

Ingredients

    2 C cooked, diced ham
    1 (4 oz) can diced green chiles
    1/3 C sliced green onions
    2 C shredded Cheddar, reduced fat
    10 7" low carb whole wheat tortillas
    1 1/2 C egg beater-type product
    2 C skim milk
    1 TBSP flour

    Also needed:
    13x9" pan
    non-stick spray
    foil or lid

Tips

I like to serve this with salsa & non-fat sour cream (not included in nutritional count)


Directions

1) Preheat oven to 350 degrees. Use cooking spray to grease a 13x9" baking dish.

2) Combine ham, chiles & green onions in a medium bowl.

3) Place 1/4 C ham mixture & 2 TBSP cheese down senter of each tortilla. Roll tortillas & place in prepared baking dish. (You should have some cheese left over).

4) Mix together eggs, milk & flour; pour over filled tortillas. Cover with lid or baking foil.

5) Bake for 30 - 35 minutes or until egg mixture is set. Uncover; sprinkle with remaining cheese. Bake for an additional 5 minutes or until cheese is melted.
