1 cup Buckwheat pancake mix (e.g. Maple Grove Farms Organic Buckwheat Pancake & Waffle Mix)
3/4 cup Skim milk
1 tbsp Olive oil
1 large Egg
Use 3 tbsp of batter per pancake and cook on a griddle or nonstick pan until golden brown, turning once when the edges are dry and top is covered with bubbles.
Makes 8 pancakes.
