Ingredients

    ...excert from WW: "Posole is a thick, hearty soup from the Pacific Coast region of Mexico. It traditionally features chicken broth, fluffy white hominy, chopped onion, zesty jalepeno peppers, and vibrant green cilantro. It is commonly served as a main dish during the Christmas season. Baked tortilla chips are the perfect accompaniment to this flavorful soup."

    2 cups fat-free less sodium chicken broth
    1 (15.5 ounce) can white hominy, drained
    3/4 cup tomatillo sala (such as Ortega Salsa Verde)
    2 cups shredded cooked chicken breast (I used to bone in breasts that I boiled and made some extra broth to use)
    1 1/2 teaspoon ground cumin
    1/2 cup chopped fresh cilantro

    MY recipe variation (totally worth it!), add the following additional ingredients & cooking step.

    In the stock pot, brown to soften these ingredients in the olive oil before proceeding with the standard recipe:
    1 chopped jalepeno
    1/2 medium white onion, chopped
    3 cloves garlic, minced
    1 T olive oil

    Lastly, add after finishing the rest of the recipe:
    Fresh cracked pepper
    Salt to taste
    juice of one lime to brighten the flavor
    2 more cups chicken broth (I found I actually needed twice as much as the recipe called for!)

Tips

I used two bone in chicken breasts and boiled them then shredded the chicken and got the 2 extra cups of chicken broth I found I needed!


Directions

1. combine first 3 ingredients in a large saucepan. bring to a boil.
2. while the broth mixture comes to a boil, combine chicken and cumin, tossing to coat; add to broth mixture. Reduce heat and simmer 10 minutes, stirring occasionally.
Remove from heat; stir in cilantro.
Yield: 9.5 servings (about 1 cup each)

Serving Size: makes about 9.5 cups
