Introduction

Use this as a base recipe. It's great by itself, and is fool-proof to make, but you can dress it up more with fresh onions, peppers, garlic,etc. Use it as a salsa, a salad topper, a filling for wraps, or a topping on sandwiches. Ingredients

    1 can (14.5 oz) seasoned black beans, drained (I use Bush's seasoned black beans)
    1 can (12 oz) can corn
    1 can (14.5 oz) diced tomatoes with basil and oregano
    1 can (14.5 oz) diced low sodium tomatoes
    4 T light zesty Italian dressing (I use Wegman's Organic Zesty Italian salad dressing)
    Medium onion diced (optional, not included in calories count)

Directions

Drain all ingredients. Mix together. Add dressing and allow to marinate overnight.
