Number of Servings: 27


    1/2 cup soft shortening
    1 1/2 cups brown sugar (you could use white sugar too)
    2 eggs
    1 teaspoon vanilla
    1/4 cup almond milk
    2 cups flour
    1 teaspoon baking powder
    3/4 teaspoon baking soda
    dash salt
    1/3 cup chocolate chips
    1 cup mashed bananas (about 3 bananas)


Beat first 4 ingredients. Add milk and beat smooth. Mix together dry ingredients and chocolate chips. Mix dry ingredients alternately with bananas to egg mixture. Beat about 2 minutes. Pour batter into muffin liners. Bake at 350 degrees for about 15 to 20 minutes.

Serving Size: makes about 24 -27 muffins
