Fresh & Easy Guacamole

I love guacamole, and this is an easy way to whip up a batch in no time! I use fresh-prepared medium-heat pico de gallo from my grocery store, and often use fresh, chopped cilantro instead of the tubed variety (but tubed is easier!). Concentrated lime juice will work in a pinch, but won't impart the same great flavor of fresh-squeezed. I love guacamole, and this is an easy way to whip up a batch in no time! Ingredients

1/2 Haas avocado
2 tblsp fresh pico de gallo
juice of 1/2 fresh lime
1 tsp. cilantro in tube
Tips
I like to serve this with a serving of Tostitos Crispy Rounds when there's room in my nutrition tracker for a little treat, but it's also very good with fresh celery!
Directions
Cut the avocado in half lengthwise and separate; cover the portion with the seed still in it with plastic wrap and refrigerate for later use (or, use it all and double the recipe to serve 2!). With a sharp knife, score the other half of the avocado both lengthwise and crosswise to create small cubes. Remove fruit from peel with a spoon, into a small bowl. Using a fork, mash the cubes. Add pico de gallo, lime juice and cilantro, mix well, and enjoy your snack!
