Introduction

banana muffins packed with fiber banana muffins packed with fiber
Number of Servings: 12

Ingredients

    4 bananas smashed
    1 cup unsweetened applesauce
    2 eggs
    2 T brown sugar
    1 t vanilla extract
    2 cups fiber one cereal -
    1 1/2 cup wheat flour
    1 1/2 t pumpkin pie spice
    2 t baking soda
    1 t salt

Tips

center will be moist if you check with a toothpick. brown sugar is not necessary and can be omitted or substitued with honey to sweeten.


Directions

preheat oven to 350 F. spray 12 baking cups lightly with cooking spray
combine bananas, applesauce and eggs in a large bowl. add brown sugar and vanilla
combine remaining ingredients in a seperate bowl and add slowly to above mixture.
divide evenly in 12 baking cups and bake for 25 to 30 minutes.
